Shortbread Biscuits


1 1/2 cups flour
1/3 cup caster sugar
1/2 tsp vanilla
150g butter at room temperature
Extra caster sugar or icing sugar for snow dusted biscuits.
Or you can use 100's & 1000's to make Fairy Sprinkled biscuits.

1. Line tray with baking paper.
2. Sift flour into a bowl and mix in sugar & vanilla.
3. Rub butter into dry ingredients with your fingers until the mix resembles coarse bread crumbs.
4. Using your hands, form dough into a ball and place between 2 sheets of baking paper.
5. Roll dough until it's around 2-3cm thick and cut using ring cutter.
6. Place short bread at least 3cm apart on lined tray. If you are doing the fairy shortbread, then it is at this stage you need to sprinkle the shortbread with 100s & 1000's.
7. Bake for 10-15 minutes at 180 degrees Celsius, checking regularly until slightly golden
8. Remove from oven and dust generously with caster sugar or icing sugar. Then let cool completely.
