Quinoa Pizza

This quinoa pizza recipe is a tasty gluten free option that will leave you wanting more than just one slice.


This recipe was originally a Local Favourites recipe from Columbus Coffee Riccarton.


Ingredients (base):

400g dry quinoa

3 egg yolks

240g diced onion

30g minced garlic

4g salt

4g white pepper

40g fresh basil

100g parmesan

1/2 cup gluten free flour

60g sweet chilli sauce


Topping:

400g asparagus

140g tomato paste

300g caramelised onion

300g roasted red pepper

150g feta

100g gruyere

50g pine nuts

Rosemary to garnish


Method:

  1. To cook quinoa, boil in water until tender then drain. This will take around 15-20 minutes.
  2. Sautee onion and garlic together and then combine and mix together with all base ingredients in a bowl.
  3. Press into a large metal tray lined with baking paper & cook base for 30 minutes or until lightly golden and firm to the touch
  4. Add all the topping ingredients starting with the tomato paste and garnish with rosemary. Bake until golden.
  5. Cut into slices and serve with a fresh spring produce salad.
