Spicy Calamari Salad

This Spicy Calamari Salad recipe is a deliciously fresh salad with added crunch from the crispy squid rings. A perfect Summer lunch or dinner.


This recipe was originally a Local Favourites recipe from Columbus Coffee Lincoln Road.


Ingredients:

4 squid tubes

12 cherry tomatoes

1 red onion

1 cup shaved parmesan cheese

200g rocket

1 cup grated carrot

1/2 cucumber

1 lemon

1 cup coriander

2 cups canola oil

2 cups corn flour

1 tbsp turmeric

1 tbsp cumin

1 tsp chilli flakes


Dressing:

1/2 cup balsamic vinegar

1 cup olive oil

1 tbsp dijon mustard

Salt & Pepper


Method:

  1. Mix all the spiced with the cornflour
  2. Slice the squid tubes into 1cm rings and mix with the cornflour.
  3. Shallow fry the squid rings in the canola oil until crisp
  4. Meanwhile, toss the rocket, coriander, carrot, cucumber, onion, tomato and parmesan together.
  5. Mix the dressing ingredients together and pour over the salad, as much as you like
  6. Place the salad into a bowl and top with the crispy squid rings. Garnish with lemon wedges
  7. Serve & enjoy
