Spicy Calamari Salad
This Spicy Calamari Salad recipe is a deliciously fresh salad with added crunch from the crispy squid rings. A perfect Summer lunch or dinner.
This recipe was originally a Local Favourites recipe from Columbus Coffee Lincoln Road.
Ingredients:
4 squid tubes
12 cherry tomatoes
1 red onion
1 cup shaved parmesan cheese
200g rocket
1 cup grated carrot
1/2 cucumber
1 lemon
1 cup coriander
2 cups canola oil
2 cups corn flour
1 tbsp turmeric
1 tbsp cumin
1 tsp chilli flakes
Dressing:
1/2 cup balsamic vinegar
1 cup olive oil
1 tbsp dijon mustard
Salt & Pepper
Method:
- Mix all the spiced with the cornflour
- Slice the squid tubes into 1cm rings and mix with the cornflour.
- Shallow fry the squid rings in the canola oil until crisp
- Meanwhile, toss the rocket, coriander, carrot, cucumber, onion, tomato and parmesan together.
- Mix the dressing ingredients together and pour over the salad, as much as you like
- Place the salad into a bowl and top with the crispy squid rings. Garnish with lemon wedges
- Serve & enjoy
