What do you like most about your role?
As Head Chef I enjoy the challenge of producing fresh and flavoursome food. I want people to enjoy what I present to them on their plate and to come back again and try something new.
I also enjoy the teaching side of my role, where I get to share my knowledge and experience with the other chefs in my team. Hopefully by sharing my skills and working with them, I can help them be the best that they can be as chefs.
Why do you enjoy working at Columbus Coffee?
First and foremost it is the team I work with. Some days can be really busy and stressful, but the team keep me grounded with their good sense of humour. We enjoy each other’s company and that is visible to our customers, who often comment that we are always happy and smiling.
Secondly, unlike most franchise systems Columbus is far from formulaic in its food offerings. Yes we have recipes for consistency, but as a Chef you have the space to be creative with your dishes through Chef’s Specials and Local Favourites.
Lastly, it’s the support I receive from my franchisee and the Columbus Coffee Support Team. They encourage me to develop new ideas and are always willing to offer constructive feedback.
What does it take to be a great Chef in a cafe?
To be a great chef you need to be passionate about everything that comes into and goes out of your kitchen. At the end of the day you want your food to both look and taste great. To achieve that you need to be focussed and deliberate in everything you do. From selecting and ordering the right produce, through to preparing it, plating it and delivering it to your customer in a timely fashion.
